"Feel the Beet" Hummus

 "Feel the Beet" Hummus with E3Camu Camu Vitamin C


The pink color of this creamy hummus is sure to liven up your next get-together.  Not only is it delicious, but it's also nutritious, with the added boost of E3Camu Camu Vitamin C and roasted beets.  Serve on your next veggie tray as a dip or use in a veggie sandwich.  

1 small roasted beet peeled and chopped
1 can cooked chickpeas drained
2/3 cup tahini
1 large lemon (zested)
1/2 large lemon (juiced)
Pinch of salt 
Pinch of black pepper
1 teaspoon of cumin (optional)
2 cloves garlic (chopped)
1/4 cup extra virgin olive oil
1-2 capsules of E3Camu Camu Vitamin C

Combine all ingredients in a food processor and begin blending. Drizzle in olive oil as the hummus is mixing. Continue blending until smooth. Taste and add additional seasonings/lemon/olive oil as needed or add more water if it's too thick. Garnish with pumpkin seeds and/or herbs (e.g. parsley).

Enjoy immediately or store in the fridge for up to a week.
