Raw Walnut Brownie Sandwich with Coconut-Macadamia Frosting
with E3Live's Blue Majik

These sandwiches are so yummy! Made with a creamy coconut Blue Majik frosting, not only do they look amazing but they taste great. A fun treat for kids!

For the brownie
ingredients:
1 1/2 cup raw sprouted walnuts
8 medjool dates
1/2 cup cacao powder
3 tbsp unsweetened coconut shreds
1 tsp vanilla bean powder
1 tbsp coconut oil, melted

For the coconut-macadamia filling
ingredients:
1/4 cup raw macadamia nuts (soaked in water for at least 2 hours)
1 can full-fat coconut milk (refrigerated overnight and scoop surface semi-solid coconut out)
1 tsp vanilla extract
1 tbsp coconut nectar
1 tsp Blue Majik powder

method:
  • For the brownie, process all ingredients together until a dough-like consistency is achieved. Mold half of dough into a square pan.
  • For the coconut-macadamia filling, blend all ingredients together until smooth. Spread evenly over brownie mixture.
  • Mold the rest of the brownie mixture on top of coconut-macadamia filling. Place in freezer to settle. To serve, cut into squares. Enjoy!
