This is a perfect on-the-go snack, post-surf/run/activity, a clever way to sneak superfoods in your children’s lunches. And once you understand the simple technique, the possibilities are quite endless. You could switch out hemp seeds for almonds, cashews, sunflower seeds or do a mix of them. You could switch out dates for other dried fruit, figs, mango, apricots, mulberries. You can add chia seeds, goji berries. The world is your oyster. :)

ingredients:
1 cup Hemp seeds
1 to 2 Medjool dates
2 to 3 cups Dessicated coconut shreds
½ tbsp Maca root powder (I’m a fan of Sol Raiz)
a pinch Himalayan Sea Salt
1 tbsp E3RenewMe!
½ cup Bee pollen


how to:
1. Boil about 2-3 cups of water to hot to the touch.
2. Pit the dates and put in a bowl. Add the warm water, enough to soak the dates. Soak while you prepare the dry ingredients.
3. In a food processor, add the hemp seeds, coconut shreds, maca, sea salt, and E3RenewMe!. Then pulse for about 20-30 seconds. Just enough to create a sort of flour. Pour the dry ingredients into a mixing bowl.
4. In a high-speed blender, add the soak pitted dates and a splash of the soaking liquid. The goal is to create a date paste.
5. Take about two thirds of the date paste to the mixing bowl containing the dry ingredients.
6. Sprinkle in about 1/8 to 1/4 cup of bee pollen.
7. Using your hands, mix it all together. It takes a little trial and error to get the right consistency. If it’s too dry, add the remaining date paste. If it’s too wet, add more shredded coconut.
8. Wash your hands.
9. On one separate plate or a cutting board, sprinkle 1/8 to 1/4 cup of bee pollen. And same with shredded coconut.
10. Now in the mixture, you will grab a chunk and roll into a ball. I find it helpful to put hot water on your hands to prevent sticking.
11. Then roll the ball in either the bee pollen or coconut shreds.
12. The balls will last refrigerated for up to a week, if they don’t eaten before then. :)
