Meet Chloe aka That Vegan Gal - a vegan since birth, exercise aficionado and gluten-free foodie who also happens to be a senior studying Electrical Engineering at Princeton University. Chloe grew up in Austin TX home of great vegetarian and vegan eateries and has been spending summers in the DC area. We check in with Chloe about her life at an Ivy League School, her vegan upbringing, her passion for food & exercise and E3Live superfoods.

Tell us about yourself, growing up vegan and life in college.
Hi, my name is Chloe! I’m about to begin my final semester at Princeton. In June I’ll be graduating with a degree in Electrical Engineering (and a minor in Robotics and Intelligent Systems) and moving to D.C. Despite now being a Northeasterner, I’m still a Texas girl at heart. I’m originally from Austin, TX, home of sunshine, healthy living, and hipster tendencies.

I’ve been vegan my whole life which a lot of people think is insane, but honestly, I can’t imagine having grown up any differently. It’s been amazing to see how far veganism has come in the past 20+ years. I remember people having no idea what I was talking about as a five-year-old trying to explain that I couldn’t eat the cake at someone’s birthday party and that my mom packed me with my own. Being vegan is just part of who I am and my life, just the way someone who has always eaten meat and dairy probably feels about their upbringing; there isn’t anything weird or crazy about it. That being said, I am so glad that I have always been vegan and never had to come to the realization on my own that I was negatively impacting animals, the environment, and my own body; I’m happy to know that I’ve always done my best to have a positive impact on all 3 things!

What is crazy to me is that I’m graduating from college in a few months! College has consumed my existence since I was about 11-years-old (college tours, course selection, testing, etc.) and for the past 3.5 years I’ve been immersed in this larger-than-life experience. At school I’m part of swim club, MMA club, and the Princeton Tower Club (an eating club aka co-ed fraternity for eating meals and social events). I’m an officer in Tower which has really defined my time in college. Overall, this has been the most intense experience; it feels like every aspect of college-life amplified in scale and compressed in time, a chain of contained explosions. In short, I love it and I’ll miss it!

When and why did you become interested in a healthy lifestyle?
I think I’ve always been somewhat health conscious just from growing up in a healthy family (eating lots of fruits and veggies, and spending my hours running around outside rather than in front of the TV). Although, I never really had the ability to make healthy choices on my own until I went away to college, and even then, a lot of my diet was based on what the dining hall on campus was serving.

It was really my first summer of living on my own while interning that sparked my interest in health. I could plan my own meals and workout regimen for the first time. I realized how much I enjoyed trying out both new workouts and new recipes. I think after you go healthy, you can never really go back.

What are your favorite E3Live superfoods and why?
I love the BrainON and Blue Majik on-the-go singles! They are easy for an on-the-go, busy lifestyle. I can just add them to drinks and yogurt and such without having access to a kitchen. They are a great way for me to get B12 and other vitamins when I get crazy busy. I also love the natural, bright color they give to food for ~Instagram aesthetics~.

How do you stay healthy and vegan while at school and while traveling?

Honestly, at this point living a healthy, fit lifestyle is just second nature to me. When I’m traveling, putting in the tiny bit of extra effort into tracking down healthy food at the airport or in a new city is well worth it (and ends up being a fun adventure). Aside from the food part of being healthy, exercise and sleep are a little bit harder to juggle when travelling, but since it’s part of my routine, I make it happen. Sometimes, that means napping on the plane, looking for a new hiking trail, or working out in the spa gym (I actually did this).

At school, it’s pretty easy to eat vegan, people are super accommodating nowadays. The kitchen staff at my eating club knows me really well and they are always asking for new products (like vegan, gluten free bread) they can get to make my life easier! Exercising in college is probably the easiest it will ever be; free gym and pool access, friends to go to the gym with, fitness clubs to practice with, etc. I’m going to miss having all of that and the ability to switch up my workouts so much (kickboxing one day, running or swimming the next, lifting, etc.).

What are your top health and fitness tips?
Eat healthy and workout habitually! I find that keeping my eating clean and my workout schedule consistent keeps me sane when school gets crazy and stressful. I know a lot of my peers tend to eat unhealthy or skip working out when they are stressed, but honestly, that just makes me feel gross and making sure your body feels great is the key to success! My second tip is, get sleep! I used to think getting 4-5 hours of sleep a night and feeling tired all the time was necessary to accomplish all my work. I’ve since learned that averaging a solid 8-9 hours a night and being able to accomplish a ton while awake due to being well rested is a way better solution!

How do E3Live superfoods help with studying?
Something I’ve learned while in college is that there is nothing better than eating healthy and getting all your nutrients to stay focused and feel amazing while studying. E3Live is an awesome way to get all the nutrients. At this point, I can tell when I’m not getting all my vitamins and macros, and it reflects in my studies. So, E3Live really helps with that! What's next for That Vegan Gal?
It’s pretty hard to keep up my Instagram while at school since I get super busy and bogged down with school work, but I do want to start doing more lifestyle and exercise posts.

In June, I will be graduating and moving to DC fulltime, so my Instagram will follow this journey. This means more vegan eats in DC than NYC and Princeton, and lots more home cooking, recipes, and grocery shopping (my fav!). If people are interested in the grocery shopping tips, product reviews, and recipes, I would love to start a blog at some point (though, that’s down the road). I’m also planning to start triathlon training after I graduate, so that would be fun to document and share through my Instagram.
